I’m told it’s summer, though what we’re experiencing here in the northwest is nothing like the heat of summers back home. Right now in Utah, I’d be in shorts and a tank, sweltering in the sun that seems to radiate from every direction like a pre-heated oven. Instead, I’m still in sweaters and throwing open the windows to let the perfect temps into the house. Pity me?
Nevertheless, even without the typical summer sun bonanza, I’m still excited to be standing next to the grill with my tongs in hand. This is one of my quick go-to recipes for a backyard barbecue. You can get ‘er done in mere minutes, but don’t let that make you think the flavor isn’t outstanding. It is. There’s nothing better than the mellow anise flavor of fennel over the flame, unless its fennel complemented by sweet onions over the flame.
Grilled Fennel and Sausage Ingredients
- 1 fennel bulb and fronds
- 1 sweet onion
- Red pepper flakes
- Olive oil
- 2 sausages
- Salt and pepper
Slice off the branches and the top of the onion. Slice the fennel and onion into wedges, leaving the end intact to hold the layers together. Toss in olive oil and red pepper flakes. Season with salt and pepper.
Grill the sausage, fennel and onions over a flame. Once heated and soft, salt and pepper to taste and top with fresh chopped fennel fronds and cilantro.
